Why we love sweet?

If at school in the lessons of biology, you were taught that we feel the back of the tongue, and sweet – his tip, forget! In 2017, scientists found out that the taste zones of the language did not exist. Understanding the taste of our brain.

He also appreciates food in terms of benefit for the body.

First, it should serve as a source of energy. And energy is carbohydrates, monosaccharides and disaccharides. That is, all that we are recognized as sweet, so unfortunately like not at all.

Secondly, food acts as a source of building materials. And building material is primarily proteins. First of all, glutamic acid, which is the most common amino acid of those twenty, which make up proteins. Therefore, food, generously sprinkled with glutamate, seems to us so tasty. In China, for example, glutamate is considered to be a national seasoning along with salt and sugar.

The signal of the appearance of a sweet or protein taste (minds) is transmitted to the oblongable brain, and the appetite immediately wakes up. Even the baby recognizes the sweet Mother’s sweet milk as very welcome! This is due to lactose and proteins. Signals about these flavors also go to the hypothalamus, where the generation of positive emotions and our mood increases. For this reason, we are so difficult to refuse sweet – the brain just does not understand why.

Sour taste in small quantities perceived as pleasant, but its excess leads to damage to the mucous. In other words, there is a limit, and if it is exceeded, the brain does not like it. Then the protective reaction is launched in the body.

Why we love sweet

The situation with salty food is the same: in moderation – well, but the consumption of salt in large quantities forces the body to give an answer, for example, increasing blood pressure. This is probably due to the fact that our ancestors lived in an environment where there was little food salt. And it is very important for the proper composition of the intercellular environment and plasma.

The most difficult with bitter taste. It is formed by molecules that are vegetable toxins, and launches defensive behavior. If you give a baby something bitter, he will spare it and shout. The bitter signal is transmitted to the centers of negative emotions of the hypothalamus and the centers of defensive behavior, due to which there is a powerful negative experience. We can drink a cup of bitter espresso, but the strong bitterness will necessarily cause a negative reaction comparable, for example, with a reaction to pain.

The feeling of bitterness is a signal that we ate something wrong. But there is one interesting point: such a taste activates the immune system, and the Gorky medications just for this reason. Well, of course, because bitter is unlikely to eat by chance.
