Stifepo: Recipe for Happiness

On a summer day, when the sun on the street, the sun shines, I want to arrange a large family dinner duration of three hours indefinitely. Greek cuisine will help. After all, it reflects the philosophy of slow relaxed cooking, when dozens of dishes and tens of liters of homemade wine replace during dinner on the table. This is a kitchen for long philosophical conversations, for thoughtful stories and for real pleasure a moment here and now. To some extent, the recipes of Greek cuisine are the prescriptions of happiness.

Stepado – This is one of the most famous dishes from the Greek Islands. The name comes from Italian Stufato and means "stewed meat". It is more often prepared from lamb, rabbit or beef. Meat is stealing with spices and wine on slow heat for several hours. But this time we offer to try the recipe from the traditional tavern Ntounias in the mountain village of Dragon, located in the west of the island of Crete. Here they offer a vegetarian version of the stifedo – based on sweet chestnuts. In the tavern prepare dishes on family recipes and use only ingredients from their farm and wild herbs with mountain fields. Tavern has no menu. The owner of Stelios usually welcomes guests and tells them that they are ready from seasonal dishes today. Each guest is invited to the kitchen, allow all the pans and choose their lunch.
